The Accidental Salad

This salad was inspired by my weekly bag of organic veggies from a local farm. In fact, it was the basil that inspired me. I wanted to make something that would showcase its peppery freshness and so decided to combine a couple of overlooked aubergines and baby new potatoes.

The result was a comforting but flavour packed salad perfect for a meatless summer evening!


INGREDIENTS:

Aubergine - oven roasted with olive oil

New potatoes - boiled

Tomatoes

Red onion

Basil


METHOD:

There is no particular method or quantity ! Use what you have and use more of what you like the best !

To season I made a balsamic vinaigrette with equal parts olive oil / white vinegar / balsamic vinegar.
