In times of quarantine

We are all trying to get through this period as best we can and I know I'm not the only one who has found refuge in the kitchen.

It's of even more importance now to eat healthily to keep our immune systems strong but not always easy when all we want is comfort food.

This particular dish reminds me of home and has the advantage of being easy to make using very basic ingredients. I used soy protein but you can use beef or even a mixture of beans.

The quantities are approximate. Use what you have!!


Sauté an onion with a couple of cloves of minced garlic and then add the chopped pepper. Add the chili seasoning.

Sauté the soy protein / beef until browned and then add the beans. Add a couple of tablespoons of tomato puree with a veggie stock cube and a glass of water and leave to simmer until thick.

Serve with rice and a tomato coriander salad.
