Smoked tofu and carrot salad with sunflower seeds and spinach

This is the perfect salad for a light evening meal but jam-packed full of everything you need.

Did you know that apart from being an excellent source of protein, tofu has no cholesterol and contains loads of iron and calcium ?



Spinach and sunflower seeds are two of the best sources of dietary magnesium, essential for your metabolism and energy levels as well as a multitude of other vitamins and minerals.


The method is incredibly easy.


Peel and grate carrots.

Crumble the tofu between your fingers.

MIX EVERYTHING TOGETHER.


I like to use a mango vinaigrette which is quite tangy and goes wonderfully with the crunchy carrots. Just add a couple of spoons of fresh mango puree to your normal vinaigrette......and Bob's your uncle !
